Hey Grant - just to let you know technically you pronounce macaron as 'mak-err-on' not macaroon which is something totally different made with coconut! Great technical info though, thanks as ever~

Trying macaroons for the first time.
Now I know why I've been saving a few of those silica packets. I'm not too upset with my first effort. I read all of the comments before starting, to look for extra tips, but forgot to do that when I decided to make a white chocolate Tonka bean ganache and went to the traditional chocolate ganache recipe. Mad respect for pastry chefs mastering all the chemistry. Well, I now know a better ratio of cream for white chocolate, and I have a great topping for ice cream. I still piped a small amount between the cookies because it was 11 pm and I wasn't starting over.
