Any recommendations on bags. What to use and what not to use.

If you are referring to zip lock style...use the better brands and make sure they are the FREEZER ones....on a long cook double bag the product. The cheaper bags always split down the side seam for me..

The only time I've had a bag failure was using a "Zip Lock" Freezer bags. And that only happened once last year. I still use them now and then but I'm a bit leery. My "go to" bag is the Food Saver bags/roll. I get them at Costco. You can probably find less expensive Food Saver type bags on Amazon.

Personally I use only 3 or 4 mil, vacuum bags, chamber vac bags are less expensive and you can clip them on the side of your cooking vessel, so you don't need to have a chamber vac to use them; however I do have one so I purchase 1000 at a time in various sizes. When I started out I used name brand Ziploc Freezer bags and they work fine for temperatures below 158° F, at higher temperatures the seams can fail.

These (and the larger size) rolls are what I use to make any size bag I need. If you have a vac sealer that is.

If you are not going to seal them use the chamber vac bags they are dirt cheap and much stronger than the Food Saver Bags....
