Finally made this and the seitan the other day. Wife prefers the noodles to the seitan, so it looks like I'm just going to start making starch noodles all the time, thanks for opening my eyes to all the random packets of stuff I know I can buy at the Asian food marts! First batch was straightforward, followed the instructions to T, photo attached. Served it with a peanut sauce, roasted broccoli and some fresh vegetables. Second batch, not pictured, I actually added some turmeric and Tandoori spices to some water, emulsified, and stirred that all in with the starch and let it resettle again for a few hours. The noodles came out dark brown, almost unpleasant looking, but when prepared looked like soy sauce noodles? Had a decent earthiness to them, and I ended up stir frying them with more roasted broccoli
