These were fun.
I think I messed up all three components.
An hour was a bit too long for the cookie. I didn't place the thermometer probe correctly and probably got my caramel too hot, and I didn't temper the chocolate properly.
Even so, they were delightful. Will definitely try this again.
Millionaires shortbread is a really funny creation to me. Three independent recipes, with close to no overlap in technique..... stacked on top of one another. It's kinda insane when you think about it. Thanks for sharing your results, they still look very nice to me! When you go to make them again down the road LMK if you have any questions. For the record I love Twix and eat them a couple times a week!
I always default to the cocoa butter method of tempering. Microplane 1% tempered cocoa butter wafers and add it to melted chocolate once it gets below 95F and it will instantly be in temper.
I've made these twice now and everyone absolutely loved them both times. Easy to follow recipe. Added flaky sea salt to the second batch, tasted great!
