SV tougher cuts

Hi all -- does the Joule basic steak guide also work on tougher cuts like chuck steaks or mock (chuck) tenders? Or do these cuts need to be SVd longer?

There is a guide in the Joule app for chuck steaks, 24 hours cook time. Tougher cuts take more time, here is a

which is a great source for more information. I also highly recommend his book, many people consider his work and charts to be a gold standard for times and temperature for sous vide.

Ok - I'm a little bit confused. the Chefsteps chart suggests cooking tough cuts like chuck at 149 degrees for 16-24 hours for medium rare. However, the Joule app recipe for Ultimate Grilled Chuck steak specify 136 degrees for 24 hours to get medium rare. Which temperature should I use for Chuck steak? Thanks!!
