I used to be mesmerized by his plating but more recently it's become very.... jackson pollock

@brendan lee, I feel the same these days. I think the colors are mostly artificial and photo shopped, I could be wrong though. .

They also seem impossible to eat. They look great but would be very messy.

FYI those plate can be eaten and are very tasty, to know this Chef had worked with Michelin Star Chef and his first goal in a plate is the taste!!!

He's working everyday in the restaurant and try to create everynight a new plate. He can do traditional french gastronomy, as fusion food etc....

He just leaving for cooking and he loves that.
