How long?

Started using my Joule...did I say I love it?? yes I do. Getting to the point, can I place my dinner in the water early morning go to work and start the Joule on my way home??? Example would be Chicken with olive oil and rosemary sitting in the water all day will that be ok?? or do I have to worry about bacteria forming.

Yes you would have to worry about bad bugs. There is the possibility to pack it in an ice bath before you leave and then turn it on at the right time (allow it o come to temp, then cook). Depending on the size of the product, if it's a chicken breast for example, you could easily start it on the way home, and then have everything in the fridge to drop it. ~45min later you're done.

Hi Maggie, I have done a little experimenting with a delayed cook. Here is an article that mentions it, it's about half way down in the article. In the test that I have done so far I did a 50/50 mixture of ice and water in a 3 gallon cambro type vessel. The temperature of the water can be monitored with the Joule app, mine maintained 33-34° for 4 hours. It took about an hour to melt the ice and heat the water to 138°. I haven't gone beyond that time to see how long it actually takes for the water to get up to 40°F at ambient air temp of 72°F, or if freezing the item to be cooked would help maintain a cooler temperature. Cooking in a cooler fitted for Joule would probable extend the delay time, but would probably add additional time to heat the water. For most situations as @Todd_Shewman_38102 is right, it would be more practical to remotely start Joule to temperature and put the food in the immersion bath when you get home. It is important to mention you want to keep your chicken below 40°F or above 130°F as much as possible for food safety.

Another option would be to sous vide the chicken when you're home, say during the weekend. Ice down the bag and keep it fridged. The day you decide to serve it for dinner, set up Joule and go about your day. On your way home or whenever, start heating up the water so when you get home, all you have to do is drop the pre-cooked chicken from the fridge into the water to reheat. Takes a fraction of the time of a full cook, the chicken will be moist and tender and no risk of nasty bad bugs.
