So I had to make some steak frites. Gray band is a bit big because I didn't adequately preheat my cast iron. Oh well. Accompanying the steak and homemade fries is an amazing rosemary garlic aioli and caramelized onions and mushrooms. I was going to make bearnaise, but it's so much more of a PITA than aioli.
