Not sure what you're wanting. Once you set the timer it does count down. There is a new clock coming out in the next version of the app that not only counts down but in addition tells you what time your cook will be done.

is suggesting that the timer automatically engage as the set temperature is reached (correct me if I am wrong). If that is the case, I'm not sure it would be helpful. In my case, the bath often reaches the cooking temperature before I am ready to put the product in and start the timer. I think manual starting of the timer, when I am ready (as opposed to when the bath is ready) is the only way to go. Apologies if I've misinterpreted your request.

And if your cooking from a guide it kinda does even that. It tells you that it is ready to cook and when you click let's cook the countdown timer starts. So I am somewhat confused as to what the suggestion is, that it doesn't already do.

I also don't understand. If I am cooking something where an extra 5-10 minutes matters, I don't want to put my food in too early. If I don't care then I just add an extract 15-20 minutes. For example as I was typing Joule announced it was up to temp for my gelato that is in a glass jar for an hour. I set the time long to account for coming up to temp, glass slowing heat transfer, and to give me some time to do something else without being interrupted.
