Ordinarily, when I get ingredients, I cook a few things that I have in mind, and go with it. The situation that i have, is I have 3 lbs of them sitting in my fridge, so any suggestions would be welcome. I've done the typical cream sauce with shallots; sauteed; and caramelized with some wine, which i realize isn't much, but i don't have a lot of experience with them, so any help would be appreciated.
