i did a trial run with a small turkey a couple days ago, and made it perfectly to spec and it. was. amazing.
Fast forward to today, prepping the bigger bird for tomorrow. And in all the hoopla, I COMPLETELY forgot to pre-sear the turkey before bagging it up. Since I've already started cooking the legs, I'm not taking those out to sear them now. And the breasts have been sitting in the fridge with all the salt/sugar and everything on them for hours so if I sear those now before the Sous vide I'm sure they'll be different with all those ingredients on them. Do I have anything to be worried about as long as I still do a good post sear?? I've convinced my wife's family they'll have the best turkey ever and I don't want to disappoint!!
