Smokerless Smoked Bacon

My first project with Joule: Bacon! Followed a Reddit stream on the subject and substituted smoked salt in the curing process. Came out great.

Thanks for the suggestion. Bacon is on my todo list, and I completely forgot about the applewood smoked salt that I have in the cupboard. (The apple guy at the university farmer's market in Seattle sells it.)

Nice job! Next time, when the cure is done and you're content with the smokey flavor sans smoker, rebag that bad boy and put it back into the water for 24 hours at 147°. When it's done, slice, sear on one side and be ready to be amazed......

My joule arrived Wednesday before Thanksgiving... along with the 10 relatives that came to town for the Holiday weekend. We'd had the menu set and my executive chef (wife) wouldn't let us guinea pig the family with any meals with the new Joule... so we did sous vide bacon overnight before breakfast a few mornings. I have to say it was good, but not mind-blowing. It didn't seem all that different from other bacon I've made without the SV. What do you find that makes it better than cooking bacon in other ways? I don't mean to be argumentative, but I wonder if I'm missing something in the process?
I know most of my family prefers their bacon more crispy, so perhaps we finished it to our liking but missed the magic.

You stated "overnight". The awesome stuff comes best with a full 24+ hours. That's when the magic happens!!
Enjoy your new Joule! Soon your wife will be wishing she had allowed some Guinea pig testing!!

I've tried the SV bacon overnight and wasn't extremely excited by it either. I haven't tried it with my home-cured stuff though. By far, the most amazing thing I made when I first got my SV was chicken. I never realized how much I would overcook it.
