I didn't take any pics of the turkey since, well, everyone has pretty much covered the awesomeness that are the Joule'd turkey parts. Don't you wish everyone could experience at least a bite from your dinner!?
Anyway, I did manage a pic of an apple pie I made a couple days prior to Thanksgiving. The crust is the CS rendition of the pâte brisée (my second use of that recipe because, yes, it is really, really good!). Apples were granny smith and empires. Cinnamon, nutmeg, apple syrup (from the boiled down apple cider), granulated sugar but not too much and tapioca to thicken. Put all that in a vac bag and let it get happy for about 24 hours, turning the bag over every once in a while. The crust was finished with an egg & milk wash followed by a generous sprinkling of cinnamon sugar.
The result...good enough to eat!
