I follow chef steps recipe and we had the most amazing turkey. I did add a bit of oregano and pinot gris to the bag

and all of a sudden i am the turkey king lol.

The skin looks amazing, how did you do the sear? pre or post or both?

I actually ended up a adding a good amount of oil to a pan and spoon the hot oil over the skin.
