Uh oh

Bought a pre brined corned beef. Sous vide it in the sealed bag it came in. This happened. Not sure what to do. Liquidy inside and yeah. You can see what's up. Not sure what to do

I honestly can't tell what's going on. What's the issue exactly? If it's just liquid in the bag, that's to be expected (as meat -- especially brined meat -- will lose some juices in the cooking process).

It's got fat on the bag that my wife says is reminiscent of fat left from grilling a burger

I don't understand what's wrong in the picture, and i understand your explanation of what's wrong even less.

Maybe I'm over reacting. It just looks different in the bag then any other time I've sous vide corned beef or tough cuts of meat

I'll chime in with the others... nothing is wrong as far as I can see. Liquid... juices...are normal and expected.
So.....take a deep breath and carry on!!

I think it looks fine, unless there is water seeping out of the bag. It doesn't look that way in the picture. I've done the same thing with a pre brined corned beef. They have a lot of liquid that comes out of the meat. Really it looks normal to me. If in doubt you can always put it in a pressure cooker.

Never had what happen to you? What problem do you perceive? Actually giving a detailed explanation of what you think is wrong would certainly help members of the site try to help you with whatever you think is wrong.

It seems like the outer layer of fat turned gray and started peeling off. It tastes fine and the textures there, but I've never had the gray or weirdly falling off fat. Wish I could describe what the fats doing better

Yes, I have had this before. Only with pre-packaged. I just wiped it off with paper towels and seared. Mine was a pork roast. Not sure what it is or what caused it. But it was fine, smelled fine and tasted fine.

Yeah, I was doing a small event on Friday night and when it looked a little off in the bag I got a little panicked. Ended up smelling and tasting normal and fine. Thanks so much for theverything feedback and help!
