Carbon steel has become my favorite cooking surface. Most of my carbon steel is DeBuyer, great prices on Amazon. I've never seen Darto. I noticed those Darto pans have no rivets on the handles. I like that. Are they all manufactured that way?

Yep. That's the beauty of the Dartos, IMO. I freaking hate rivets; they're impossible to get clean. All the Darto pans are made from a single piece of metal, so that's not an issue.

Does anyone here have the paella pans? I'm honestly not sure what use they'd see in my kitchen. The large one isn't really that large (for a paella) and the little one is a bit too little. I can understand getting a bunch of the little ones and using them as serviceware, but at $32 a piece that price can add up quickly. And anything I'd imagine using the 34cm pan for I would probably also be able to do in my 12" Lodge cast iron.

I think what's most likely is that I'll get a No. 15 and 20 to round out my set of the handled pans (my 23 and 27 are pictured above). I used to think that I'd never need anything smaller than the 23cm pan, which is already on the smallish side... but I think the 15 and 20 will be ideal for cooking eggs. The 27, which is their largest, really isn't that big. I wish they had a bigger option. I recently added the twelve (and five eights) inch Matfer Bourgeat carbon steel fry pan to my wishlist so I could have a bigger option when I needed to do things like sear two strip steaks or pork chops at once. The Matfer (in a slightly smaller size) was the top choice from America's Test Kitchen not too long ago. It's not all one piece of steel, but there aren't any rivets on the inside of the pan. Hey, they can't all be perfect.

I have one of the small ones, it's nice for two of us. I bought the set, one of each size except for the large paella. I wanted one of those but they keep going up in price. Initially the large paella pan was a lot less, now it's $90.00, I know it's worth it but I think I will go with three more of the smaller ones for about the same price.

Yep! I took the No. 27 and my Mirage Pro to my in-laws' house for Thanksgiving so I could do a post-sear on the turkey outside. Works well. The ChefSteps pan sauce video features a Darto on an induction burner.

If you don't buy on the special shipping cost almost as much as the pans. They have a set, includes one of each size, except the large paella that they sell that usually includes shipping. If you don't want the set now is the best price you will get.

Yeah I just got three but that is what thought about cost. Reason being is that there is a 50% off sale with firsts and seconds on the morning of the 7th but the catch is no free shipping.

If anyone gets the No 34 Paella, let us know how you like it and use it. I've got a 32cm Matfer carbon steel pan coming for Christmas and am curious if I'd ever need something like the No 34. It'd obviously be nice to make paella in... but I'm pretty sure I'd do that one time and never again.

I'm beginning to wonder if I'm every going to see my Darto order.....as of this morning it is still in Buenos Aires tagged by DHL as 'Uncontrollable Clearance Delay'. I don't know what that means exactly. Did somebody at Darto fail to fill out the bill of lading correctly? The eta on delivery has been changed from (last) Friday to today and now it reads 'estimated date of delivery currently unavailable'. Never having dealt with Darto, I'm not quite sure what to think. Wait? How long? Cancel the order and move on? I did call them on Friday and they young lady was as nice and helpful as she could be but could offer no more information that what is online.

On the outside of the pan, from the top edge going one inch down there is a noticeable unpolished area. Does not affect cooking but wondered if it was normal.
