If you ever try the steel on the induction can you post the outcome?

Meh. Carbon steel, like cast iron, isn't great at providing even heat and induction elements aren't great at generating even heat. My sense is that you'd have a giant, pan sized hot spot in the middle and cooler, less useful temps around the edge. Uneven all around. I have the MC pizza steel, and have used that as a griddle over gas burners, but I haven't bothered to try it with induction.

what do you think about the mini griddle baking steel to be used on the vollrath induction?

kenji lopez rates them. any advantages over pans do you think?

If anyone gets the No 34 Paella, let us know how you like it and use it. I've got a 32cm Matfer carbon steel pan coming for Christmas and am curious if I'd ever need something like the No 34 in addition. It'd obviously be nice to make paella in... but I'm pretty sure I'd do that one time and never again.

So the 15cm pan is quite small. I'm drooling over the individual paella pans but I need to stay focused on the larger pans for searing.

You are correct, top outside measurement, not just the cooking surface. I use my 27 cm and 23 cm the most. The 15 cm, paella and saute are great for individual servings.

The site reads that the size is the 'outside diameter'. Is that the measurement across the top of the pan or is that the bottom (surface) of the pan? For example, the smallest Darto skillet is 15 cm. I took out the smallest T-fal skillet I have and the measurement across the top of it is 18cm and the bottom is about 12cm.
