The Modernist Cuisine book has a recipe from memory. I'll see if I can find it for you.

3.355 has a crispy dosa recipe. If you don't have the book, a few minutes with your favourite search engine will allow you to find pdf copies of the book.

Have you tried Vahchef? I frequently use his recipes for Indian food. They're fairly traditional recipes, and he demonstrates the technique.
