First extended cook - 100hrs oxtails

First cook spanning several days. Seasoned with S&P. 100hrs @ 140F. Quick garlic mashed potatoes and caramelized onions and shrooms. The meat just melted in my mouth.

Edit: Forgot to mention, no need to compliment on my plating. I am a professional. /s

I always love when my mom had oxtails in her pho broth. It was "dessert" after I finished my bowl of pho.

Thanks! I had a bit of anxiety during the 4 days of cooking. Part of it was whether I had messed up somehow. The other was just waiting for it to be done. I would come home to the soft whisper of Joule and sigh "only X days left".

Yeah pretty much what I figured ... this kind of cooking goes deep into the mind!! I am fortunate to have as a best friend a psychiatrist/great cook whose services will probably be required!!
