Sous Vide: The Healthier Way

Might be good to highlight how sous vide is safer than roasting, toasting, grilling, smoking, or frying foods.
High temperature cooking methods make food less healthy by spiking levels of HCAs, PAHs, NPAHs, acrylamide, and AGEs. Some reading selections on these nasty chemicals in food:

Sous Vide is not necessarily a healthier way. It is however a much tastier way.

There aren't many ways to cook food safely to the required minimum temperatures to kill harmful bacteria whilst minimizing the harmful chemicals that may form during more conventional methods. Food can be cooked/denatured with heat, pressure (pascalization), and/or chemicals(like acid in ceviche). It can also be irradiated to kill pathogens. Anyhow, you've failed mention any other superior process that can yield food with lower levels of unhealthy chemicals that form during traditional cooking techniques.

I was referring to leaching chemicals (diethylhexyl adipate, bisphenal A (BPA), etc...) into food when cooking via Sous Vide. Grilling, smoking, BBQing, and/or frying foods is of course also very unhealthy.

The typical plastic bags used in sous vide - high-quality vacuum bags or ziploc are made of LDPE which doesn't contain BPA, BPS, diethylhexyl adipate(DEHA), or DEHP(phthalates). Other brands may, but it's easy enough to use the better quality bags. The levels in the cheaper bags are at lower levels than the harmful chemicals formed in food I mentioned above - especially potent are NPAHs.

It's certainly not environmentally friendly to waste plastic every time you cook - that's a drawback.
See the pacific garbage patch, sea life choking on plastic bags, etc, etc. There's an impact for hundreds of years sometimes thousands of miles away like this:
