The smoker thingymajiggers from Amazn smokers.

How well does the smoker work? It looks beautiful! Possible to do cold smoking?

The last one is a drum coffee roaster, the Smoke tubes I got were the ones Martin (DiggingDogFarm) recommended.

They are the bomb, I use them in a simple Masterbuilt electrical smoker and they are just perfect for cold smoking and then sous vide.

It has gone from I seldom used the smoker to now firing it up often several times a week.

The tube smoker works the best at the elevation I am, highly recommended.

Anyone have experience with this brand of pans? Swiss diamond

Some of this stuff I've had a while but it is now in one room.

420 litre (14.8 cu ft) chest freezer; ice machine (holds 36kg/80lb makes 68kg/150lb per day) and a 991 litre (35 cu ft) fridge.

I forgot this bad boy too which has been collecting dust for the last two months.

All the stuff I buy is so tame in comparison to this. I mean I bought an Immersion Blender last week because my old one broke....goddamn, I have serious equipment envy.

@Louis-Frederic, it is the Thermo Scientific Heraeus™ Multifuge™ X1R Centrifuge with the F15-6x100y Rotor. The "R" is for refrigerated.

I can spin a max of 600ml (6x100ml) up to 15,000rpm/24,652xG with the rotor I have. The largest rotor that fits this unit is 4x400ml but only at 5,000rpm/4696xG.

Once I have played with it for a few weeks I'll post an idiots guide, or guide by an idiot, on things to know when buying and using a centrifuge for culinary use.

I was recently gifted a new Hawkins 5 liter stainless steel pressure cooker after dealing with only jumbo pressure canners for years and years.

It passes Laura Pazzaglia's chickpea test for determining if a pressure cooker operates near 15psi.

"Take two cups of (not dusty) chickpeas and soak them overnight. Then, tomorrow morning pressure cook half of the soaked chickpeas for 13 minutes at high pressure in four cups of water with natural release. If they are perfectly cooked (not crunchy but not too tender either -in other words edible) then the cooker operates at around 15 psi. If they are still crunchy and raw, set them aside and pressure cook the last half in four cups of water for 22 minutes with natural release - if they are perfectly done and not mush, then it is true that the cooker operates at a lower pressure."

It seems to work well.

Today I made chicken stock with 2 kilos of chicken parts and it turned out real good.

Yes, It was designed by Martin Kastner (of forkbowl fame) for The Aviary. It's an infusion vessel, and a showpiece. If you have some patience and can ignore all the morning show chatter, here's a video of Charles Joly showing the effect over multiple pours.
