Liquid Nitrogen

The local provider for liquid nitrogen where I live offers liquid nitrogen at different concentrations, or purity as they call it, with 99.99% being the most and 90.99% the least. What concentration is best of I'm to use it for ice cream?

Uhhhhh... if there's 9% of the (alleged) LN that's not actually nitrogen, DO NOT USE IT.

They would have to provide a MSDS to you. Then you could see what's cutting it to 90%. .

I would use the 99.99%, medical and culinary grade. Methane, oxygen and moisture (water) are the usual adulterants in the lesser purity.

I've been getting LN2 for about 18 months from 3 different places and was never given that option. Perhaps try a different supplier?

I doubt that the ~9% of other constituents are truly harmful, but why risk it -- go with the 99.99% purity.

Not necessarily. Where I lived before, I would get the LN from a store that worked only with restaurants. Granted they also supplied other culinary items

Yeah just for curiosity's sake! I still don't know why they would have this unless they have a buggered tank. Cause most vendors want to keep these things like Lox and Lin pure!
