Contamination in a Chamber Vacuum Sealer

I have been breaking down a number a chickens per week for the last month and vacuum packing the carcasses and trimmings for stock at a later stage.
While I wipe out the chamber after each raw packing, is there a risk of contamination if I vacuum pack a product that has no cooking stage (think melon compression) after the chicken?

Hmmm, never heard of the vacuum lines being an issue. But commercially, these are just sanitized with a bleach solution or a quaternary ammonia cleaner using a wipe down.

Is there a risk of contamination getting into the air lines where you cannot wipe?

Is bleach and liquid detergent enough? I've been wondering the same thing and I usually sponge clean with a
detergent, then a bleach spray after every poultry and pork use.

Yes. Be sure to sanitize the chamber in these situations, it's a major opportunity for cross contamination.
