I'm quite fond of carbon steel. Kind of stopped using my stainless steel for searing protein. However the other day just for the hell of it I used my 14 inch stainless steel Viking pan just to see if there was much difference. Not much difference, I've noticed that my infrared thermometer has trouble giving an accurate reading on a dry stainless steel pan (before adding oil) than it does on the carbon steel. I'm guessing it's the reflective quality of the stainless. But without reservation I still enjoy using my carbon steel much more than my stainless steel. The size seems like over kill but it cuts down on oil splatter and it gives you more thermal mass. The extra helper handle is also very useful when cleaning these monsters. Blunts? I think that is directly proportional to the number of licks it takes to get to the center of a tootsie roll tootsie pop....
