Would like to see an alarm for when water temp drops like if power goes out or disconnected.

Mine gives an alert when the unit gets disconnected. If it gets disconnected, it can't give you an alert that the temperature is dropping because it's disconnected.

For long cooks, I stick my ThermoWorks ChefAlarm probe into the water and set it to go off if it drops below a certain temperature.
