I run a foodie list on Yahoo Groups. One of the members posted this:

"Has anyone "enrolled" in the chef steps $10.00 sous vide courses? I like their web site, but there are several cases of setting one temp at the start of a free recipe, then it is different in the actual recipe and then does not match their cooking chart on time and temps.............."

I know there have been a few instances of things like that; they're really just typos that are usually caught and corrected the day of publication.

Also, please note that the chart is a guideline. It will have a range of time/temperature relationships for a given product to yield a certain result, but that does not mean that they are the only combinations of time and temperature possible with that product.
