I purchased glucose syrup before I discovered the seemingly "newer" Wine Gummy recipe. Could I get an explanation on the change in sugars? Was this due to the "grainy" feedback on the sugar? Is there a way to use my glucose syrup with the newer recipe? Are there any cons to using Joule rather than on a stove?

I was riffing around with Grant's quick Hollandaise. I added a soy marinated egg yolk along with some dried orange peel. I got a wonderful result and a more classical hollandaise color. It seemed a little thin so I added some Xanthan Gum... This resulted in a "Hollandaise pudding" but honestly, I thought it was fantastic!…

I submitted a ticket but I’m unsure how helpful they will be since I have no idea who purchased it. Anyone here have any…

I figure I could ask James Beard Award Chefs how they did it. This is not a plea for a job, more like guidance for a culinary student about to embark on…
Anyone track the average between date of address confirmed to e-mailed tracking number? My address has been confirmed, now it is a nail biting finish! I hope it will last!
I'm pretty comfortable busting out some fancy plated dishes for 4-6 people. but I'm sort of at a loss for dishes to make for 8+ people that don't need to be plated. My mind immediately goes to casseroles or lasagna or something somewhat sad. There's always the option of busting out a big roast or a turkey or whatever, but…
